Lots of guests have asked for the “signature recipe” of Elves Manor Guest House, so here it is:

Elves Manor Organic Not-Gooey Butter Cake

2 eggs, organic if possible

½ cup vegetable oil (I use organic canola oil)

1 cup sugar (I use organic evaporated cane juice)

¾ cup flour (I use unbleached organic white flour)

1/4 teaspoon salt (I use Real Salt)

1 teaspoon vanilla

Preheat oven to 350 degrees. Mix all ingredients together with a either a hand mixer or large spoon. Batter will be thick. Pour & spread batter into an 8×8 pan lined with parchment paper. Parchment paper is essential. No need to oil the parchment paper; just line the pan completely with it before pouring batter into pan. This will make removal of cake from pan easy. Bake for 30 minutes. Lift out of pan and cool with parchment paper on a rack. Not Gooey Butter Cake will separate easily from parchment paper when you are ready to enjoy. Refrigerate or freeze if not consuming immediately. Yield: 18 bars.
